This series is made from Hitachi Aogami #2(Blue steel #2).Kasahara forges blue steel #2 with soft iron in traditional way.So this series is easy to sharpen.

Blue steel includes a little chromium and tungsten.So this series can keep it's edge for longer than white steel knives.
