Honyaki Hocho , means that is true-forged and made of a 100% steel, not forged with steel and Zigane.
This is very tough, and you must use a ceramic waterstone to hone it, however, its edge is outstandingly long lasting.
Especially, when you cook a sharp-toothed eel, you have to hone the knife every time.
This knife has its advantage in such a case.
Many remarkable Japanese cuisine chefs favor this knife because of the feature even though it is hard to hone.
This knife definitely needs proficient technique to be made.
Hocho Blacksmiths in Sakai prefecture made it rather artworks with their accumulated technique for 400 years.
